How is Beignet cooked?

A beignet is a French pastry made from deep fried choux pastry. In many senses it is similar to what the English call a fritter.

Beignets can also be made from other types of dough such as a yeast dough. When yeast doughs are used the normal shape of the beignet is spherical (like a doughnut bit without the hole in the middle). In this case the result is often called boules de Berlin.

The Corsicans use a chestnut flour to make beignet and call them Beignet de farine de châtaigne.
