UPDATE 16 JANUARY: The team has been shortlisted for the national heats from 28 February to 3 March! Out of over 50 entries, Zac, Iza and Princee are now in the final 24.

Three of our brightest young Hospitality & Catering students have presented their video entry to this year's Nestle Toque D'Or competition. Now in its 28th year the Nestle Toque D'or aims to bridge the gap between classroom and industry and has evolved to become one of the UK’s most prestigious catering competitions.

This year, our Level 3 Professional Cookery students Zac Truong, Iza Kalyane Macedo and Princee Pownall-Weir have created a delicious beetroot tartare with summer rolls. With more and more restaurants increasing the number of healthy vegetarian and vegan options on their menus, we don't think this dish would be out of place in any high-end London eatery. The students' dish has amazing texture, taste and colour and demonstrates that healthy food can taste great too.

If you want to try it out for yourself, the recipe is available here. Check out the video entry below to hear Iza, Zac and Princee talk a bit more about their amazing dish.

Toque d'Or has a prestigious history of success with Masterchef UK winner Gary Maclean a previous Toque d'Or winner in 2014.
